A good breakfast bread for Thanksgiving morning.
I threw this together in my kitchen one morning when I needed a break from the routine bowl of cereal. Fat can be reduced by switching cheese and eggs for lower-fat varieties.
This was a recipe I found on allrecipes.com and tweaked it a bit to make it healthier. I posted a double batch because I cook for a lot of kids, so you can cut everything in half for fewer pancakes.
My mom used to make tuna salad during Lent and this is my own version of it; I decreased the mayo and added some vegetables to make it healthier. To increase protein/fiber, you could also add a can of black beans, drained. I like to have it on toast or a pita.
I reduced the fat/calories from the recipe on the package of vegetable dip, and I like this version. Good with Triscuits!
I'm always tweaking recipes to reduce fat/calories, and here is one that I made for my kids today.
