No Pasta Lasagna

Yummy layered veggies. I used potato instead of pasta. All ingredients are organic. I just through it together and couldn't believe how tasty it turned out. I just had to share it.

Coconut Crusted Tofu

It's a take on coconut crusted shrimp but w/o the cholesterol. It's fantastic over a peach or mango salsa!
