Whole Wheat Gingerbread Waffles

Make buttermilk with skim milk and vinegar. In a bowl combine buttermilk and oats. Set aside for 15 minutes. In another bowl combine flours, corn meal, brown sugar, ginger, cinnamon, baking powder, baking soda, salt and a pinch of cloves. In a third bowl, beat together egg, molasses and canola oil. Add to oat mixture. Add wet ingredients to dry ingredients and stir until just moistened.
Coat a waffle iron with nonstick spray and preheat. Spoon in enough batter to cover 3/4 of the surface. Cook according to waffle iron instructions.
