Amy's Basic Breakfast Pita

whole wheat pita w/scrambled eggs, turkey sausage crumbles, spinach and cheese

I modified my Nanny's recipe to make it a little healthier and add in at least a few veggies. For more variation, I've tried adding .25 cups of finely chopped carrots as a third veggie. If I have it, I do half ground turkey and half lean ground beef. Ketchup on the top is optional.

Coconut Cream Cake

Yummy and easy cake with the same rich taste but fewer cals/fat than using regular Eagle Brand. Recipe is based on 12 servings but I half a serving with another calorie-counting friend and it makes it less of a diet killer.
