Add nuts if you'd like (1 cup finely chopped) I omitted to keep calories down. Is good topped with ice cream or whipped cream.

The pudding-like batter bakes into the rhubarb and is just the right touch to take the sting out of the rhubarb. I usually use some whole wheat flour substitute for white and try brown sugar instead of some of the white for a little different flavor. It is my staple rhubarb recipe.
