Needed to use left over Challah, fat free (or as near as possible). This first rendition was not bad but needs more seasoning.
Had some for lunch and on a whim used the last bit of Rose City Pepperheads Mango Madness. YUMMMMMMMMY! In fact, it would be better with just a plain, non-marinated tempeh (the crispness of the tempeh survived the baking nicely). That would also reduce the sodium level considerably. Can't wait to try this again. Just have to figure out where we found that jelly. (It's both spicy and sweet, made with sweet red peppers and mango peppers.)
This is my sephardic grandmother's version without the walnuts.
My mother's version of cole slaw using greek yogurt instead of sour cream
Simple crock pot/slow cooker meal. Easily modify with ingredients on hand and preferred seasoning. Nice comfort food for a cold day. I love using my left over roasted chicken this way.
Try with different pudding/fruit combinations. Can be a side dish, dessert or even a guilt free snack.
Modified recipe from allrecipes.com to add some flavor and reduce density. Think recipe would also be good with some finely chopped fresh apple (maybe 1-2), raisins and/or dried apples. Also think might be good substitute lemon extract for vanilla and add 2-3 tbsp poppy seeds. Alternatively, use 1/2 tsp lemon extract and finely grated lemon rind from a small lemon (with the poppy seeds).

Found in low fat recipe book by Richard Simmonds.
For me, this is a catch all recipe for my current left overs. Modify for your taste and ingredients.
Quick dinner using leftover cooked chicken.
