MarkNJayde's Revamped Meatball Sub

Mark loves meatball subs but they are definitely not healthy! This is our reduced calorie and fat version. Also works well using leftover cooked ground turkey by crumbling it on the sandwich instead of making into meatballs. Use 99% Fat free ground turkey to make even healthier.

Compared to Subways 6" meatball sub which has;
580 Calories
23 g Fat
9 g Saturated Fat
1 g Trans Fat
1530 mg Sodium
70 g Carbs with 16 g from sugar

MarkNJayde's Grilled Onions

These are great for many different applications. We make a bunch and then use them all week in place of raw onions. Since they are grilled with just a little EVOO they are a much healthier alternative to caramelized onions if a recipe calls for that try these instead.

Fresh corn is one of our favorite summer vegetables, so we have cooked it in every imaginable way and this is by far our favorite and in my opinion the easiest. Keep in mind corn is sweet so there are calories and the carbohydrates are high from the sugar content as well but keep in mind people these are vegetables and in my opinion if it's a vegetable chill out and enjoy! There are many other benefits from vitamins and nutrients.

MarkNJayde's Version of Fabulous Greek Souvlaki!

The original recipe for this came from,
details.asp?nutrition_id=10185824 I changed it up just a tiny bit by using boneless skinless chicken breasts instead of thighs and cutting the olive oil in half! It cut out an additional 21.4cal and 3.6g of fat.

Uncle Dan's Ranch Dip

Our family has tried many low fat ranch alternatives and this is the best by far! Bell peppers have never met a better mate! Enjoy!

Curried Burgers with Chutney Sauce

This is a nice change to the everyday burger. The recipe calls for watercress to top burger but I find a nice piece of crunchy iceberg cuts the spice of this burger. Enjoy!
