Recipes I've Shared:

Newfoundland Split Pea Soup

Split pea soup as it's made in Newfoundland. Using Salt Beef (Navel beef) instead of ham or bacon.

Decadent Pumpkin Muffins

I love pumpkin muffins, and I wanted to create a version with less fat and calories that still tasted good. These muffins turn out moist and full of flavor!

Blueberry Pudding

My mom made this every year with fresh blueberries we picked ourselves.

Healthy Chocolate Banana Muffins

Original Recipe Here:
This is my very modified version.

Banana Bread

Recipe common in Newfoundland. Adapted to have less sugar and half brown instead of all white.

Easy Feta Bruschetta

Using Aylmer accents and feta cheese makes a wonderfully easy Bruschetta

Spinach Ricotta Lasagna

A mixture of regular meat and spinach lasagna recipe in an effort to make my husband happy.

Slow cooker Spaghetti (meat) Sauce

This is my go to meat sauce for all my pasta needs. It's a pretty big batch so I freeze some.

Lentil Chili (Vegetarian)

I wanted to try substituting lentils for ground beef in my usual chili recipe.

Soft Taco Bake (Mexican Lasagna)

You can also use the Old El Paso Soft Taco Bake kit but I didn't want to buy it processed, I used the Taco Seasoning recipe from allrecipes and just used regular marble cheddar and tex mex cheddar instead of the fake cheese sauce.

I'm sure it would also be good with whole wheat tortillas and you could also substitute for ground turkey.

Mom's Carrot Cake

Amazing carrot cake recipe with no nuts or eggs. Extremely moist and flavourful.

Crab Dip & Salad/Sandwich filler

Inspired by my mother-in-law's crab dip.

Superb Spinach Dip - Low fat version (original from Kraft) 2 tbsp

I got this from the Kraft Kitchens website but I substituted fat free sour cream Miracle Whip.

Serve with your favourite bread or veggies. In a pumpernickel bread bowl is best.

Sundried Tomato Pesto Chicken Vegetable pasta toss

experimenting with dinner one night and this is what I came up with. I'm sure that for basil lovers a regular pesto would also work.

Delicious stir fried veggies

You can substitute your favourite veggies in this recipe. The steak spice makes an amazing vegetable seasoning. (Best veggies I've ever eaten)

Cauliflower & Leek Soup with leftover Roast Chicken

Standard creamy soup with Leek and cauliflower base with Leftover Roast Chicken added at end.

Onion Bhaji

These hors d'oeuvres are easy to make and can be shallow or deep fried. Find chick pea flour (besan) at an Indian grocery store.

Meatloaf (South Beach inspired)

My regular meatloaf with no breadcrumbs, made while on South Beach phase 1 although I'm not sure about the ketchup.

Very Good (2 ratings)
Cheesy Cauliflower & Broccoli bake (South Beach)

an alternative to potatoes for a side with meatloaf or any other dish.

Very Good (1 rating)
Low Fat, Low Carb Curry Cauliflower Soup (South Beach Phase 1)

I love cauliflower soup but I usually add some potatoes and carrots. While I was doing Phase 1 of the South Beach diet, I tried this recipe out and loved it. It would also be good with a little bit of broccoli but I didn't have any on hand.

Breakfast Quiche Cups (South Beach inspired)

Variation of a few SB Quiche recipes as well as my favourite Quiche Lorraine recipe.

Jell-o Light Creamy Layers

Another South Beach friendly recipe. Taken from the jell-o box.

Pepper Steak

Asian inspired ginger beef stir fry with rice.
