Inspired by Patricia Polacco's book, but made a bit healthier.
Original recipe calls for 1 cup shortening (vs 1/4c butter/ 3/4c applesauce). I also lessened the sugar. (Original recipe is 1 1/4 cup of sugar.)
We make this everytime it is stormy :)

Jillian Michael's Hotcakes

Simple-- only three ingredients. Low carb, high protein. When topped with honey or a bit of jelly, they taste a lot like "regular" pancakes.

Sunbutter Banana Oatmeal Chocolate chip cookies

No added sugar, no flour. Just banana, oatmeal, Sunbutter & chips.

Chocolate chocolate pumpkin muffins

I replaced part of the flour with cocoa, and part of the oil with applesauce and halved the sugar. These were delish! I made them for breakfast and half of them were gobbled up by my 4 girls and hubby before morning.

Baked Fritata

Adapted a 5 star recipe from AllRecipes with what I had on hand. :) Bake and have breakfast prepped for yourself for 6 days. :)

Oatmeal banana pancakes

Adapted rom Fanny Farmer's recipes. I used a banana instead of butter, and added oatmeal for part of the flour. These were really good!

Spinach & Veggie Meatloaf muffins

Got this off of WeeLicious' website, and tweaked it. Serve it once a week for dinner & have leftovers for lunch... Puree the veggies in a food processor, and get lotsa veggie goodness in the kids, and yourself :)

Sweet Cornbread

Very sweet, soft cornbread muffins. Won't get dry after they cool. Not lowfat or low calorie.

Fatten Up The Baby HEALTHFULLY Oatmeal Breakfast

My little one started dropping off the growth charts once we started solids, so here's what I'm feeding her in the morning (after 12 months) to get more calories in. :) My doctor told me to give her "cookies, ice cream and cake!" As someone who has lost 100 pounds, no way am I going to program my baby to prefer junk food!

Mexican Bean Soup

My sister's soup... we eat it once a week. Yum. You can do this in a slow cooker, or use canned beans, if in a hurry.

Food Network Inspired Italian Meatloaf

I got this 5-star recipe off the Food Network website, but had to tweak it a bit, as I didn't have bell peppers... I also omitted the olive oil and used brown rice vs breadcrumbs.

Pork Chops with golden Mushroom soup & rice Gluten Free

My mom used to make this for us when I was a kid & I just loved it. I modified it to where it is gluten & casein/dairy free. (You could modify this and use regular flour & milk, if desired.)
My family gobbles this up. It is enough for 3 meals for 4 people in our house.

Turkey Meatloaf

Redid EricaClay10's Brown Rice Meatloaf with what I had on hand, so wanted to get a correct calorie count. :o) I used Oatmeal instead of brown rice, because we were hungry & I didn't have time to make the rice first.

Simple Healthy Banana Oatmeal Cranberry cookies

The only ingredients: bananas, a summer squash, oatmeal, olive oil egg and craisins. They are quite tasty & good for you, too!

Gluten Free Healthy Cranberry Chocolate Chip Cookies

They taste sinful, but are so good. These aren't "mini" cookies. I replaced most of the oil with pureed pineapple, and a bit of yogurt. They are soft, fluffy, and really good out of the oven. They taste good the next day, too. They are pretty "cake-like", and will not crumble after they cool off like most GF cookies. Good for school lunches, trips & picnics. :)

Red Potato Salad

Made with half the mayo & added yogurt for a zing. My kids love it.

Gluten Free Peach & Blackberry Cobbler

Made with gluten free all purpose, sorghum and millet flours, but can use whatever GF flour blend you prefer. Lightly sweetened. Yum! This is a LOT of dessert for 200 calories!

Tropical Fruit & Yogurt

Fresh pineapple, strawberries, apples, yogurt and coconut. Yum.

I changed her Poor Man's Meal up a bit to be a bit healthier by substituting hot dogs for sausage and using red potatoes and a sweet potato vs white. My dad makes fun of me and calls this "The Yuppie's Poor Man's Meal."

I took a family friend's recipe and made it healthier by using crushed pineapple instead of oil, whole wheat flour, and half the sugar. It came out really good! Your kids/tastebuds won't know these are fruit filled without much sugar!

Puerto Rican type Meatloaf with Capers & Green Olives

I took the brown rice meatloaf recipe, and redid it with olives & capers & cilantro for a Spanish flavor. :) Reminds me of my grandma's cooking.

You can use less (or more cinnamon/spices as you choose.) Makes 12 muffins or one loaf. (I like the muffins, so you can make sure you know your exact calories.)

Modified Eggplant Lasagne

I liked the idea of the other eggplant lasagne, but did not have the items on hand that she did so I had to calculate my own recipe. :) I also have so many eggplants and tomatoes from my garden, I needed to use them up!

I saw these on another website and wanted to make a few changes to their recipe. I added jalepenos to half of the batter for a yummy change. We had these with the Slow Cooker Chicken Taco Stew.
