I threw this recipe together really quick using things I had on hand. It's low in calories considering it's an entire meal by itself. It's also low in saturated fat, cholesterol, and sodium while being high in monounsaturated fat protein, and fiber. It's pretty good and would be great served with rice.
This is a really easy way to make tasty chili that even vegetarians can eat. Only takes 40 minutes or so.
