brown turkey. chop veggies and do a quick stir fry, add sauce and turkey. Allow to cool enough to handle comfortably. Lay down waxed paper and lay out 3-4 egg roll wraps, fill them with the meat/veggie mixture and fold/roll according to pkg directions. Spray a jelly roll pan with Pam, lay egg rolls onto pan 1" apart. Cook in 400 degree oven for 12-15 minutes.
