A very filling, easy, quick and nutrient dense stew. Oh yeah, and it is deceptively tasty.

Quinoa Latkes

These little pancakes are a great way to use leftover quinoa. They are full of fiber and protein and are really delicious with breakfast or dinner. They are best fresh, but do reheat well enough in a toaster oven.

Tangy Avocado Dressing

How many salad dressings can you say have only healthy fats, and have both fiber and protein?! Not many. This tasty, tangy, creamy dressing is delicious and will give you a good way to use ripe avocados. Try it as a twist on a ceasar salad, or on a chicken taco salad. Yum!

Creamy Peaches with Mint

This is so simple as to seem boring, but trust me - it isn't! I am not usually a plain fruit dessert kind of girl, but I had all these peaches, and a huge bed of mint. I thought I wonder if these would go together? So, I made it and it is so good it is impossible to explain. If you like peaches and minty things you will just love this. Trust me. The key is this: Fresh, fresh, fresh ingredients. Fresh mint and fresh peaches are really what make this shine - I would not try this with canned peaches. But I think you could use nectarines.

Quick Veggie Pie

Fresh vegetables in a quiche-like pie that uses a tortilla for crust. Quicker and lower calories but truly tasty.

Tangy Lemon Garlic Shrimp

Easy shrimp dish to eat with pasta or rice, or as is. Tang comes from mustard and lemon, and garlic and white wine complete the dish. Cilantro adds a slightly Cuban flair.
