Currant Apple and Oat Muffins

Here's a recipe for muffins with no oil and no added sugar (other than what is in the dried currants). The muffins are dense. While not a breakfast masterpiece, they are a good alternative to a high fat muffin.

Spaghetti sauce with ground chicken (1 serving = 227 gram=8 oz)

2 ingredients, just made slightly healthier. Doctor as you see fit-I add cumin, Splenda, etc-whatever you want to taste.

Crispy Pecan Pie Bites (1 serving=2 pieces)

These mini pecan pie bites are crunchy and delicious! They are a great alternative to traditional sweet pecan pie and the individual phyllo shells help with portion control!

Turkey Bean Chili

Just trying this out. I suspect it needs to mello for a couple days before it gets good. I think about one cup is a serving.
