This is lovely served with crudités, which are delicious with the rich, slightly sweet carroty hummus. Serves four to six

This is really nice served with a simple pasta, with leftover cold meats, in a sandwich or with a simple jacket potato and knob of butter. Any leftovers can be kept in the fridge then served as a really posh coleslaw

Lentil Sheperd's pie with Champ

Adapted classic English dish - a winter warmer with more pulses and vegetables, less meat - still full of taste

Butternut squash chili

Really nice 525 calorie, vegetarian chili. Really heartwarming. The orange zest is the secret ingredient. The portions are really huge because I eat this as healthy comfort food - it easily could make three or four servings.

Venison sausage casserole

Nice low calorie casserole. Leaves lots of calories for some nice wholemeal bread to go with it.

The venison sausages in the calculation are from Tesco, a UK supermarket. You can replace them with other less-then-5% fat sausages - preferably game of course.

Lemon cod with spicy chick peas

A really lovely light meal (420 cal each) rich in vitamins and minerals.
I have it when I had a heavy lunch or add an ear of corn, half of a whole wheat pitta or another vegetable to it.

A beautiful fragrant low calorie recipe full of flavour and vitamins. Adapted from a recipe from Jamie Oliver, a UK television chef. My boyfriends favourite, it's also cheap, so a winner all round.

Spicy low fat coleslaw

It's a great side dish to tex mex or served as the main vegetable dish next to tuna or chicken.
The portion size is really big. It can easily be a side dish for 8.

In the ingredients list I've listed a head of cabbage. Mostly I use an assortment of different coloured cabbage, carrots, swede or any other root vegetables.
