This trail mix includes Goji berries, which are considered a Superfruit for their incredible nutritional value and for having one of the highest rankings on the ORAC scale (Oxygen, Radical, Absorbance, Capacity), which measures their antioxidant activity. I just think they are YUMMY!!
Make this mix ahead and split into quarter cup servings! Take for a healthy, filling snack where ever you go!
These came out amazingly moist!! I was looking for a recipe to use up bananas (again) and some strawberries that I had left over at the end of the week.
I came across this recipe and made some adaptations for my own personal preferences and ingredients that I had in the house.
There are so many ways you can make these! I was looking for something new to do with my spaghetti squash, so I thought I'd give egg cups a whirl.
These are so awesome for meal prepping on a Sunday and using throughout the week, or even make for a brunch!
Always on the search for ways to use fruit that is a little too ripe. This recipe was a hit!! It combines your ripe bananas, with pumpkin and chopped apples. Add in some protein powder and you've got yourself a perfect breakfast or snack!
I made a few adjustments to the original recipe, shown in my ingredients list. For example, I used organic pastry flour (which is a lighter whole wheat flour vs. your normal bleached white flour), subbed coconut oil for butter, used a combination of granulated sugar and coconut sugar for the sugar, and added 2 scoops of vanilla whey protein powder.
