Chicken & Veggie Enchiladas Verde

These enchiladas turned out pretty spicy. I'd recommend leaving out the jalepeno if you are cooking for people who are sensitive to spicy hot foods (like kids). Serve with sour cream and lime wedges alongside.

Unbelievably delicious. Great brunch meal.

Sauteed Zucchini, Corn & Shrimp

Delicious, quick light meal that makes excellent use of early summer produce. Please note that recipe does not include specific amount of salt or pepper, so you will need to add a specific amount to your nutrition tracker if you are watching your sodium intake.

Kitchen Sink Vegetable Soup

...because I just threw in pretty much everything in except the kitchen sink. :) Could be a vegetarian meal if you leave out the bacon and use vegetable stock instead

Spring Veggie Linguine with Chicken

Very light pasta dish with lots of spring veggies and a chicken breast for added protein. Could easily substitute fish, shrimp, or even some beans.

Jamaican Pineapple Salad

Can be modified for vegetarian: just do not top the salad with chicken. Jerk Chicken is a separate recipe and is not included in the nutritional breakdown for this salad.

Cumin Yogurt Sauce

From Great Food Fast cookbook. Goes with Indian Spiced Chicken Burgers (added into SP separately). Modification: I used Greek yogurt and thinned it out a bit with some lemon juice.
