Recipes I've Shared:
This will make 4 nice servings to go on top of salad, but if you're using it to fill tortillas you could easily get 6-8 servings out of this recipe.
Yummy! Use 1 can coconut milk in place of the almond/water blend and adjust the cayenne to suit your tastes. I got the original recipe from allrecipes.com and adjusted it to what I had at home.
Not low fat but very delicious. I had to enter the original recipe because I ate it and I needed the calorie count for it but you can use substitutes to make it lower fat and lower calorie, or you can just have a smaller piece. Apple sauce would be good since it is an apple cake after all. I used 2 single serving, vanilla flavoured yogurt cups because I didn't have sour cream but you can use sour cream instead of yogurt (measure about 1/2 cup) or a low calorie yogurt in the flavour of your choice.
Tasty and low cal. Serve with a dollop of sour cream or yogurt (not included in calorie count of recipe)
Quick Egyption Bean Breakfast
The nutritional info will vary on the brand of beans you use. The can I'm using is fava mixed with chickpeas and I wasn't sure if I should use the net or drained weight in the recipe since I'll be using the liquid from the can. I've seen other recipes that use things like green onion and cumin but I'll keep it simple for now.
Yummy! You could use different milks or cheeses to suit your tastes and calorie needs.
You can use store bought breadcrumbs but I have day old pita that needed to be used so I made my own.
You can sweeten this with honey or sugar if you want, but I like it just the way it is. Each serving is 1/2 a pear with about 1 tablespoon sauce and 1 tablespoon Cool Whip.
You can add a protein of your choice if you like just note the calorie count will be higher. Beansprouts would also be nice in this soup.
Super simple tomato sauce. I said 8 servings but it'll depend on how saucy you like your pasta.
2 Big Servings
I think I like this better than mashed potatoes! The nutritional info may vary depending on the brand of butter or margarine you use or if you use light cream cheese instead. This would also be good with flavoured cream cheeses like roasted red pepper or chive!
Yummy! Cut back calories further by not using any milk at all and using a lower fat cheddar! Makes about 8 cups of soup.
Usually there are no carrots but why not throw in some extra veg? This is persian style because theirs is much less saucy than the Italian kind.
Good for salads. Makes about 4 tablespoons. Just enough for a family size salad unless you like yours really wet. Then just make a double batch. Also, I like my dressings a bit sour but you could add more oil if you want.
Persian vegetable stew with beef & beans.
Makes 4-6 servings depending how hungry you are. Serve over steamed basmati rice.
We order tandoori chicken at work sometimes and I thought it would be a good recipe to make at home since I like it so much. Adjust the cayenne to your tastes. I don't like mine too spicy.
I just eat about 1/4 or half of this for lunch or dinner but it could easily be 6 or 8 side servings. Add some kind of canned bean (rinsed first) to add protein.
Altered from the cookbook. I didn't have blueberries (should be 1 cup) so I added whatever strawberries I had on hand. Didn't have low fat yogurt (should be 1/2 cup) so I used regular strawberry yogurt. Everything else is the same as in the book.
I used Martha Stewart's recipe for the dough and made my own filling.

You can use any combination of chicken pieces including breast if you like. Serve with basmati rice and a side of my recipe for tomatos and peppers.
Delicious Iranian rice pudding. Add raisins if you want. This recipe is very large, good for parties or pot luck ... make half if it's just for at home.
Delicious Persian salad that I always get when I go to restaurants. Cheaper to make it at home and goes with any meal. You might find sumac at any middle eastern store, but if you can't find it leave it out. It just adds an extra tang to the salad.
I serve this over anything made with ground beef. Burgers or meatloaf are perfect!
Yummy! Substitute cranberries if you like tart things. Or leave out the fruit and add some poppyseeds. You can use fresh or frozen berries.
This is my favourite way to cook eggplant. I use to eat it with pita but now just serve it on the side of my dinner.
