The most moist and tender good-for-you muffins, filled with fresh fruits and berries and 4 grams of fiber per serving!

Mushroom Baked Risotto

Much-much easier way of cooking risotto. You cook only mushrooms, put risotto in oven and it is ready in less than half an hour all by itself!
Any mushrooms can be used.
Fresh rosemary can be substituted with fresh thyme. Chicken broth can be substituted with veges or beef ones or just use water.

Caesar Salad (light recipe) with Greilled Corn

Chocolate Chip & Banana Muffins

These are very-easy-to-make muffins with a slight banana aroma and mouth full of chocolate!
The original recipe came from Food&Wine magazine. I have reduced the amount of sugar significantly as the ripen banana is usually very sweet. And I made three times less muffins than the original recipe called.

Protein Waffle One-two-three

This is a very fast and easy to cook, healthy and nutritious waffle for breakfast, lunch or brunch. It is only one serving but you will not need seconds, believe me, it will make you full especially when served with Greek yogurt, honey and fresh fruits and berries. I recommend using fresh citrus zest as it is a natural, powerful and fresh flavor ingredient. And if you need several waffles just double the ingredients, triple, quadruple etc. :)

An improved and more flavorful version of my "Tuna Waldorf Salad with Pear". The Greek yogurt really makes the salad fresher and lighter. Though the calories in this one are slightly higher but it is due to increase of protein.

Healthy easy-to-make dish with great aroma. I used olive oil instead of butter in this recipe: I believe, it taste much better this way.

Lentil Soup with Smoked Turkey

Low calorie, high protein, easy-to-make soup. Flavorful and delicious! You'll not believe how smoky-tasty it smells while cooking! We usually smoke the whole turkey on Thanksgiving so I cooked it with the turkey leftovers. I also prefer to serve it with soft goat cheese on top, it melts in warm plate and adds a very mild dairy creaminess to the dish.

This is my mom's recipe.

The crepes are not sweet and very thin, so you can serve them with anything you like: fruits, whipped cream, sour cream, condenced milk, jams, smoked salmon, cooked meat, etc.

I perefer to serve it with Russian caviar.
