A basic Quinoa Salad full of crunch and protein. The onions, radishes, lemon juice and cider vinegar add zest. The carrots and bell peppers add a bit of sweetness.
I modified the Sparkpeople White Bean Chili because the calories didn't seem to take into account dry beans expanding. Most sites had listed more calories for the dried beans. I also added no-sodium tomatoes to the recipe for flavor and used a slow cooker. This has a lot of flavor and a little more calories.
Easy chick pea curry if you can get Grace brand sauce. 8 servings of 1/2 cup.
Add veggies to Grace Caribbean Rice and Peas or other Caribbean combos.
The green pepper is the best part since it absorbs the spices in the packaged rice really nicely
Salad dressing based on a mix of one shown online
and one my Aunt made for Thanksgiving.
Basic pasta with mushrooms, canned tomato sauce and veggie meat. The sodium is too high. I am going to try to find a low sodium pasta sauce.
