Homemade Hot Chocolate- big glass

Not too sweet, but rich and very filling. Add a dash of cinnamon and a dash of chili powder for flavor; marshmallows on top prevent a skin from forming. High-calorie, but lots of calcium and protein.

Jess' Muffin Recipe

Jess makes hers without chocolate. Life is too short for that, but she says they're good with apricot (1/4 c. dried apricot) instead, or craisins.

Grilled Eggplant Parmesan

Actually made in the oven instead, as the grill isn't working. Taken from Gourmet, June 2007, with some modification to increase protein.
