Super simple to make and everybody loves them.
I used 1/3 cup of the red wine vinegar, but I like my dressing zingy. You may find it a little too strong, so you should reduce the vinegar to your preference.
This is just enough for 3 people to have a good serving, about 3/4 cup each.

Erhard makes this soup all the time. It is perfect for low cholesterol, low fat diets and very filling and tasty. Add more or less salt for your personal preference. Freezes great!
