Very Low Carb - uses Shirataki Tofu Noodle Subsitute
This provides a great base for any kind of cookies you want to make low calorie. I have added a tablespoon of peanut butter to make peanut butter cookies & 2 tablespoons of chocolate chips to make chocolate chip cookies. Cookies have a "cakey" texture. (Don't forget to add in calories for whatever you add to them).
