Pumpkin is another one of those super foods! Full of wonderful nutrients!
I hate mornings and usually the only thing that can get me going is a McDonald's breakfast biscuit. Here's our healthy substitute! 1/3 less calories, 1/2 the fat, 1/3 the sodium, 1.5x the fiber, 4.5x the protein, 25% less carbs, and ONLY 10% OF THE CHOLESTEROL! McDonald's foods are full of trans-fats! This stuff can be deadly! If you love a breakfast sandwich like I do, you have to try this. Guarantee this will keep you feeling full longer and will taste better with all these gourmet ingredients.
I have seen many variations of this recipe. You can add other spices such as curry powder, cinnamon, fennel, coriander, cardemom, clove, cilantro and other fruits and veggies such as raisins, granny smith apples, apricots, plums, acorn or butternut squash, kalamata olives, all types of peppers, even peanuts. I've seen it prepared with wild rice or couscous. It looks like the possibilities are endless. Let me know if you come up with a different combination than seen below.
