I added 2 tbsp to the nutritional content to account for the fat left in the broth from the skin.

Eggplant, squash, mushrooms, tomatoes, garlic, and onion make a yummy low cal dish.
Use 1/2 tablespoon whipped cream cheese frosting for an added sweetness and only 25 calories.
Use leftover chicken for pasta.
Use to stuff peppers and bake or eat alone
Easy, low calorie meal. Could also be made in a crock pot.
