Recipes I've Shared:

Mediterranean Lamb and Chick Pea Stew

Warming and full of vitamins on a cold day. A whole meal in a bowl... Serve with yoghurt and pita bread to round out the plate if desired!

Mexican Pot Roast

A fun way to enjoy a nice piece of pot-roasting meat! Great served with brown rice, tortillas, fat free sour cream or your choice of delicious Mexican accompaniments. (An olive lover tells me this would be good with black olives....)

Note: calories calculated based on a 579 gram roast. Calories will vary depending on the meat!

Sarah's Fat Free Tzaziki

Love it with grilled lamb and tomatoes in a wrap!

Garlicky, Yoghurty Mashed Sweet Potatoes

Great with grilled pork or chicken and a side of green vegetables. Adds great colour to the table!

Spicy Southwestern Chicken Soup

This is a spicy winter warmer. It's popular in our house when one of us has a cold. There's lots of vitamin C and plenty of chili and garlic to clear the head!

Cheater's Chicken Chili

This is the easiest chili I know how to make and it's great for the cold weather. Serve with grated cheddar cheese, sour cream and tortillas (all can be reduced fat).

Honey Mustard Butter Beans

These warm and creamy butter beans are an excellent accompaniment to pork or chicken dishes and they have loads of flavour and fibre!!!

Squash and Pork Roll Ups

This is a wonderful fall dish--warming and low fat! Serve with fresh green vegetables such as broccoli or cabbage and accompany with a nutty grain.

Chicken, Pear and Blue Cheese Salad

A quick and easy meal! Leave out the bacon and chicken for a tasty vegetarian side dish.

Southwestern Squash Soup

A warming autumn dish with a kick!

Zesty Feta Salad

This is lovely with some chickpeas and whole meal pita bread or flat bread for a quick easy dinner!

Smashing Spanish Omelette

This is a great "fast food" on a weeknight. The bacon is easily omitted and other veg (and meats) could easily be substituted. (We like corn and squash as options.)

This is lovely with a nice green salad or some green beans.
