Wonderful southern holiday classic is calorie reduced by the substitution of Splenda instead of sugar and skim milk instead of whole milk and a light buttery spread instead of butter. Further health savings may be realized by replaceing the lard in the pie crust with vegetable shortening.
This recipe is as close as I can get to the German Potato Salad from Shapiro's Deli in Indianapolis. You may want to use olive oil instead of the bacon grease to make it healthier.
I got this recipe from Kraftrecipes.com. It is very simple to prepare and is delicious. You could reduce the calories even more if you used a sugar free angel food cake. I use whatever berries I can get the best price on. This recipe is a great alternative to sugar laden/fat laden desserts and is very good.
