I personally don't like fat free dairy products but you could use fat free cheese and sour cream, if you prefer.

The recipe called for 3 medium peeled potatoes but all I had was small red potatoes, so I used 6. I left the skin on them, since the red potatoes have a pretty thin skin. It was delicious - my kids gobbled it up!
