squash & sweet potato soup

acorn squash and sweet potato give heartiness to this slightly sweet soup

pizza dough, no yeast, no egg

i've made this a few times now, i cut the dough in 12 pieces to form individual mini-pizzas and i bake them ahead of time and then toss them in ziplock bags to make my own mini pizza at work (5 mins with toppings in toaster oven).

i usually cut this recipe in half...and freeze half of the half for meals during the week! 3" shells are what i use, and it just makes a TON!

a great way to get your bran in the morning! AND this recipe's batter can be kept for 6 weeks in the refrigerator!

bulgar, grapes, & goat cheese salad

this is a cold salad i first tasted when a friend of mine who can't cook showed up to work with it...hesitant but intrigued, i dove in. SO GOOD!
i love to take this to work and to the beach!
i switched the original recipe's feta for goat cheese, but either one tastes great! enjoy!
the following link has a recipe where they candy the walnuts...but i opted for just raw...


my variation on food & wine's recipe...SUPER refreshing! i substituted Fage yogurt instead of sour cream, and added hot sauce to jazz it up a bit! i nixed all the garnish stuff - to keep it simple to make. SO GOOD! hope you like it!
