this is a typical breakfast food in the middle east. Originating from Egypt, but very popular in the Levant as well.

roasted kabocha squash soup with sage and yogurt

this soup can be made with any winter squash, nonfat yogurt gives a creamy texture with out added fat.
Optional garnish with pumpkin seeds and sprinkling of parmesan cheese (not factored into nutritional information)

lima bean & spinach salad

It is best to used dried lima beans and soak overnight or for approx 12 hours, but canned can also be used.

Roasted Brussels sprouts and okra

can sprinkle crumbled gorgonzola cheese and/or pumpkin seeds for added flavor and texture (these items not factored into nutrition information)

serve over brown rice
