Tangy Lowfat Ranch Dressing

All my life, I hated Ranch dressing! It was thick and goupy, and I didn't like the flavor (some brands are even sweet - ugh!). A coworker made ranch dressing using Hidden Valley Ranch mix, buttermilk, and mayo, and I discovered it was better than the bottled kind. I experimented at home by substituting 2/3 of the mayo with Greek yogurt and adding lemon juice. It came out tangy, fresher, and lower fat than using only mayo!

Pumpkin Muffins

I've tweaked several recipes to make my own version of pumpkin muffins. You could use egg substitute to make it even more light and healthy. Very flavorful, spicy pumpkin taste. Great with a cup of coffee or glass of milk on a cold day.
