Hearty stew made with bottom round, mushrooms, and buttery Yukon gold potatoes.
I serve this with steamed baby carrots mixed with 1 tbsp butter and 1 tbsp brown sugar.
Scallops over hot linguine. Easy to substitute shrimp for the scallops, use a combination, or use other firm fish. Reduce calories by substituting spaghetti squash for linguine.
