Banana Nut Muffins

I bake these super moist, banana muffins & freeze them for work. I first made these when I had a lot of weight to lose & used these muffins as a substitute for tempations at Starbucks treats.

* you can always cut the salt in half

** as another option, you can add dark chocolate pieces!

These are deeeeeeelicious!

Buckwheat Pancakes (with or without Bananas!)

I probably make these pancakes once a week for breakfast & have a boiled egg or turkey sausage with them. This recipe serves 4, so I half the recipe just for me & eat these pancakes with a few chopped walnuts, half a cup of mixed berries & maple syrup.

While there is zero white sugar or flour, you can find buckwheat & spelt flours at places like Whole Foods or most likely any organic or health food grocery store.

1) you can use unsweetened soy milk/rice milk/almond milk or even regular milk for this recipe.
2) I use extra virgin olive oil since I don't have vegetable oil.
3) I don't typically add 1/2 tsp of salt that's suggested & they turn out great!

Grilled Chicken Breast with Fresh Ginger

I made this fast & healthy grilled chicken for dinner tonight & it was delicious! I steamed some broccoli & spinach as well & it all went really scrumptiously together!

This is perfect for those who have those indoor grills & are looking for a great marinade for plain chicken breast!

This recipe is called for 2 chicken breasts or you could make just one & use the extra marinade during the grilling to coat the chicken.
