This is a super yummy and colorful side dish to replace rice, potatos, etc. We just recently discovered quinoa, and the family loves the combination of textures in this dish. Not only is it super tasty and filling- it's also pretty inexpenive- about 4 bucks for 6+ servings

Lemon Sage Chicken with Potatos

This is a super easy one pot meal that is super tasty. My whole family loved it. This base recipe doesn't have any veggies but I throw in a bunch of broccoli or asparagus and it goes perfectly.

chicken enchiladas

this is a yummy (and pretty cheap- less than 10 bucks for 7 servings) recipe that my family loves! If you use reduced fat cheese and soup you'll cut the calories even more! The whole family loves these- they have spice, but aren't spicy.

extremely yummy salsa chicken

This is a super yummy and easy way to spice up chicken breasts. I used full fat, but low fat cheese and sour cream can be substituted.

Beef Tortilla Bake

this is a super easy, yummy dinner I make for the family.. served with a side of corn and zucchini is our fave!
