This awesome recipe is a good basic milk or can dress it up. Make thick or thin variations. The toasted coconut along with the omens it's a rich flavor to this not milk.

Pumpkin Pie Smoothie / Breakfast Pudding

If you omit the ice and use coconut water and coconut milk ice cubes instead of measured milk and water it makes almost a pudding for an extra rich breakfast treat.

Plum Banana Coconut Milk Smoothie / Breakfast Pudding

Smooth and creamy breakfast smoothie. Make it thicker using just coconut water and coconut milk as ice cubes and omit plain ice cubes.

Lima Bean Soup / Lima Beans and Pasta

Admittedly I was skeptical...someone gave me a bag of dried lima beans - not my favorite vegetable but I never had them dried and that's usually a huge difference in taste.

Ok - so is this a soup or is it lima beans and pasta? It started out as a soup but I wanted something more substantial and added dried brown rice pasta broken up so it soaked up all the yummy juices.

Vegan Chili w/ lentils (serving = 1 cup)

Chili variation uses lentils and TVP (optional) for texture.

Corn Bread - Vegan, Wheat Free

Wheat free, vegan corn bread - feel free to add some 'fixings' like nuts, dairy free chocolate chips, fruit, etc.

How to disguise leftover veggies? Make a "cream" soup!

Use any type of vegetable - have fun! Broccoli, squash, pumpkin, etc. Quick and easy besides low fat - a winner all around! Can use fresh veggies but even easier using left over veggies - see notes.

Wonderfully delicious and simple to make cracker. Play with different flour / spice combinations besides the suggested ones.

Vitamix Orange / Strawberry Sorbet

This would work with any fruit and is creamy due to the addition of some coconut milk

Juice - Carrot, Celery, Beet, Kale

Just your basic juice for a juicer - also added a green pepper, parsley and lemon.

Pasta and Lentils - Vegetarian

Wonderful dish bursting with flavor - will make your tastebuds dance!! Carrots add a certain sweetness while the thyme adds such an indescribable flavor! Quick to make.
