Vegan Pasta Primavera

I really like this colorful comforting dish and it's good for you. I have found it is liked even by my non-vegan or even non-vegetarian guests so it's great for entertaining. Enjoy.

Coconut Corn Chowder (Vegan)

I got this from a cookbook I got from my mother-in-law for christmas. I add whatever frozen veggies we have on hand or even canned (no salt added) and it's great. Make it your own and enjoy. Goes great with a sandwich.

Thai-Style Curry (vegan)

You can add more peanuts to make this more thai or more curry for a more indian flavor. I got this from the seven secrets cookbook and find it adapts well to whatever other veggies I've laying about.

Easy Veggie Chili (Vegan)

This recipe is great because you can change it up any way you want or just depending on what you have left over in your fridge or pantry in terms of veggies. Some people add celery or zucchini. Others like lots of bell pepper in all colors. Make it your own and enjoy.

Eggless Egg Salad (Tofu)

Got this from pg 256 of Vegan Living (complete idiot's guide to) book. But, like any good salad you can make this one your own by tweeking the recipe. All appropriate credit to them but I wanted to add it here for anyone else eating vegan. I hope that's ok. Great for picnics or other occassions where you might normally have egg salad. My first shared recipe. Enjoy.
