Hearty Whole Grain Waffles

I start with Lehi Roller Mill Whole Grain Heart Healthy Hotcake mix as a base for this recipe. You can use any pancake mix you like. I use Lehi because it is a very wholesome food containing whole wheat flour, whole flaxseed meal, nonfat dry milk, eggwhites, and dry buttermilk. I add old fashioned oats and cold milled flaxseed in this recipe, so even if you use a basic pancake mix, you will end up with a nice whole grain waffle.

I use the shredded meat I get from rendering the turkey carcass. Any part of turkey meat could be used, but this is a great use of the meat from the carcass since it will naturally be shredded when you remove it from the bone.

Yummy breakfast or brunch dish to spice up your morning. Even makes a great dinner dish. Serve with fresh fruit.

Biscuits Supreme

This recipe is from The Better Homes and Gardens Homemade Bread Cook Book published in 1973. This is my favorite bread cook book. It's out of print now. This recipe makes very light and rich biscuits. I sometimes substitute Half 'n Half for the milk. This will add calories and fat so I only do this for special occasions.

My husband buys the seasoning for Gold Star whenever we visit Cincinnati, his home town.

For those who love turkey and for those who bought cheap turkey the day after thanksgiving. (my husband bought five 20 pound turkeys for 49 cents a pound!) I will be adding recipes I try over the next few months as we enjoy our 100 pounds of turkey. Yikes!
