These muffins are surprisingly moist, even though they're low in fat, thanks to nutritious, flavorful add-ins like carrots, banana, and raisins.
Make two boxes of jello according to the directions on the box.
Refrigerate until the jello just begins to settle.
Chop then add fruit and nuts- you can vary this however you'd like. Strawberries, oranges, and kiwi supposedly don't work because the jello won't set correctly.
Put in back in the fridge until it completely sets!
