Chocolate Banana Peanut Butter Smoothie

This smoothie is a meal in a jar. The fat and protein in the peanut butter and the protein and fiber in the Manitoba Harvest Hemp Pro Fiber powder give this a nutritional boost that keeps you feeling full for hours. Use a two-cup serving for meals or a one-cup serving for snacks.

Choco Monkey Cookies (2 ct.)

When craving a chocolate fix, I altered our favorite breakfast cookie recipe by taking out the dried fruit and replacing it with chocolate chips. These chocolatey delights are still just for an occasional treat, but they offer a healthier alternative to traditional chocolate chip cookie recipes.

Quinoa Tabouli Salad (1 cup)

Adapted from Arkansas Life magazine, July 2012, recipe from Greenhouse Grill in Fayetteville, AR. Original recipe called for 3 cups rough-chopped parsley, but it was far too overpowering. I have substituted one cup chopped cilantro, and the whole family is delighted with the results.

Tzaziki Sauce (1/4 cup)

This sauce goes great with Turkey Gyros.

Serve with diced tomato, onions, and tzaziki sauce in a pita. (Flour tortillas are a quick, easy option, too.)

Chocolate Eclair Cake--light (12 servings)

I based this on another recipe on Spark, but used lite cool whip and sugar-free pudding. Next time, I would use less cool whip, skip the third layer of graham crackers and just drizzle melted chocolate over the top.
