A summer squash casserole hearty enough for the main dish. Serve with salad and bread for a satisfying meal. I searched the web for various summer squash casseroles and many had too many calories or fat for such a small portion. This is a hearty portion, is healthy, and tastes yummy.
Made this on a whim and it tasted amazing. I cooked it all at once which made it easy and yummy, but I'm sure someone with more patience might find even more flavor if they blanched the leeks separately and then added them to the rest. I served this as one serving aside miso soup.
