This recipe is adapted from a recipe by Lois Gordon I found on Allrecipes years ago. I have slightly healthified it by using partly whole wheat flour, changing the original vegetable oil to coconut oil, and adapted it for mini muffins. You could go even further by using nonfat yogurt, fully whole grain flour, and a smaller amount of mini chocolate chips.
A quick mac & cheese recipe that makes a hearty dinner with minimal effort. I normally make this with tons of butter, and with the butter omitted it t turned out a little bland so I'm looking for suggestions to flavor it up without adding a lot of time or calorie count.
