I threw this together last night with some leftovers from the fridge. YUM! Quick dinner or snack!
I found this receipe online & it comes close to what I get via carry-out at the local Thai place. I left it vegatarian, but you can add any type of protien that you'd like: Chicken, Beef, Shrimp, Pork, etc.

I just threw this together last night & it turned out awesome! It's a southwestern twist on veggie soup.
I've tossed in whatever leftover veggies that I have & it makes an awesome side dish or full meal!
My Great Aunt used to make the best & simplest chicken noodle soup there is. She used to make homemade noodles. I don't, but I do try & find the Kluski noodles which are pretty darn close to hers. I also cut the fat by using boneless, skinless chicken breast. She used to use a whole fryer chicken.
This makes a HUGE pot for a very large family gathering. I tend to make it, then freeze in small portions so that I can enjoy it whenever I like. Enjoy!
Use with or without meat for a quick weeknight treat! You can also substitute the beef with chicken, turkey, pork or tofu! Can be a meal or appetizer!
Veggie soup with lots of cabbage!
