A simple modification or two slightly improves on the great Spanish Rice and Beef recipe already available, but decreases the calories by almost 15% per serving!
A lot like mom used to make, just better for you! The applesauce replaces a quarter cup of oil and gives the cornbread a nice sweetness. Leaving the Splenda out would tone down the sweet taste for those among us that like a more backwoods, saltier cornbread.
Very easy to make and great for taking the edge off a chocolate craving
