Fiberrific Salad

I have this salad almost every day. It's loaded with fiber - 13 grams. It also counts as 3 servings of vegetables.

Asian Grilled Pork Chops

I saw this recipe on posted by LAURIE. I made a minor change to reduce the sugar. I don't think the Spark nutritional information is accurate because you discard the marinade and that isn't reflected in the nutritional info.

Pork Chops With Cider Vinegar Glaze

Adapted this recipe from a recipe found on These chops are very savory and juicy.

Molasses Glazed Ham Steak

I saw this recipe on posted by Trisha W. I made a minor change to reduce the sugar.

Lemon Glaze for Chicken Scaloppine

This is a glaze to be poured over Chicken Scaloppine. Original recipe found on posted by Kittencal. I've made some minor changes to the recipe to increase the amount of glaze.

Chicken Scaloppine

Another recipe I originally saw on posted by the talented Kittencal. I did reduce the amount of oil from the original recipe.

Souped-Up Tomato Soup

Easy and awesome tomato soup. Original recipe found on posted by ms_bold. I changed the recipe a bit to make it lower fat.

Tomato Artichoke Chicken

Found the original recipe on posted by Chef of Kids.

Chicken Palak (Spinach Chicken)

This is an Indian dish for spinach (palak) chicken. It's just like a dish I order from our local Indian restaurant. Excellent served with basmati rice and lavash bread.

Garlic Parmesan Flax Seed Crackers

High fiber, lower carb crackers.

Baked Sweet Potato

I found this recipe on, but it was a higher fat and calorie version. The original recipe was posted by Tish and it's Baked Sweet Potato recipe #55678 on 'Zaar. Anyway, I had to make some significant substitutions to make the fat and calorie counts more diet friendly. It worked and this turned out fantastic! We served this with lean country style pork ribs and they were amazingly good. I think this would also pair well with Salmon.

Chicken Teriyaki

This Recipe does require 4 - 8 hours of marinating time. Super fast and easy to prepare. Mom used to make this for us growing up. Doesn't get any easier than this.
Recipe is from the back of the Kikkoman Teriyaki Marinade & Sauce bottle. Serve with rice and broccoli or Asian vegetables.

Healthy Chicken Fried Rice (Low G.I.)

I got this recipe from It was originally posted by little _wing. It is high in fiber and protein but low in fat. So much better for you than take-out but, I think, it tastes just as good.

Spinach Saute With Brown Butter & Garlic

Recipe from RecipeZaar. Originally posted by RiffRaff. This might have been a Mean Chef recipe . . . Top rated spinach recipe. I reduced the butter about from 2TBS down to 1TBS.

Barley Lentil Soup

Got this recipe from, originally posted by justcallmetoni. My sister tried this and recommended it to me. Great source of whole grains and vegetables. Nice and low fat too.

Pan-Roasted Broccoli

I got this recipe from It was posted by Roxygirl in Colorado. It's an excellent technique for cooking broccoli. I've only ever boiled broccoli and was used to having very mushy and limp broccoli. Pan roasting it keeps it crisp. I've modified the recipe to serve 2.

Very Good (4 ratings)
The Original Cabbage Soup Diet

I got this recipe off of According to the recipe description there, this recipe was from a 1995 or 1996 National Enquirer. It was posted on 'Zaar by Spyder-man. I did make a few minor modifications (I didn't add green peppers or shallots and made some other adjustments).

I don't believe the Cabbage Soup Diet is a great diet to follow, however, this is a really good soup for snacking or lunch. It reminds me of the Cabbage Soup they serve at Big Boy. Also, I halved the recipe and it still made a TON of soup - - roughly 20 servings.

Diet Cola Chicken My Way

I got this recipe from It was posted by justcallmetoni. It's a modified Weight Watcher recipe and has a lot of flavor and very few calories and few calories from fat. It's a great diet go-to recipe.
