I used LOTS of pinto beans in this chili - a whole bag of dried beans. It is flavorful, delicious, filling, high-fiber, high-protein and low-cal.
Although it has a long cooking time, You could easily make it in a slow cooker or have it simmering while you're doing something else nearby. It doesn't need constant attention, so it's easy to have a big pot of it going while you're cooking something else.
