Apple Tapioca

Delicious, very old New England fall recipe. You can substitute Splenda for sugar which seriously reduces the carbs and calories.

Maple Granola

Portions are small - 1/4 cup. the recipe makes 10 cups. yummy on yogurt, ice cream or as a cereal with fat-free milk

Blueberry Scones (Revised)

This is a flexible recipe. I often substitute dried cranberries or raisins for the blueberries; you can also use applesauce, banana, cinnamon, etc. Also, any nuts work; I have also used chopped walnuts or sliced almonds

Mal's goulash

Sometimes called American goulash or Hamburger/Macaroni casserole but I just make it in a skillet.

Chicken and Cashew Bake

Excellent casserole! Can be prepared ahead of time and refrigerated until ready to bake. Remember to put the topping on for just the last 5 minutes of baking.
This may be served alone or over brown rice. Use soy sauce to taste if you wish.

Chicken Osso Bucco

Oh so good and good for you, too. Both DH and I loved it. This would be a great company meal also. It is easy enough to serve any evening of the week

Easy, low-fat, low sugar, and delicious! Good for breakfast or a snack. Great with coffee, tea, or milk.

No, no added shortening or fat is needed! This is a flexible recipe. I've also made it with fresh berries, raisins, etc and sometimes with added cinnamon or vanilla. Play with it and make it your own!

Italian Soup

Delicious, quick, can be made with italian turkey sausage instead of pork sausage - You'll have enough for your family and enough left over to freeze.

Great recipe for a family night or pot luck makes a lot. Actually it is just the two of us now but we love the leftovers. I adapted it from a community cookbook and think that it is a Greek dish. With the adaptations it went from over 800 calories per serving to just over 400.
