This recipe is suitable for Atkins or other low carb diets. The addition of chicken broth and white wine make this a little different from the typical alfredo sauce. It's just delicious!

Faux Chicken Wings - Low Carb

This might sound like a strange recipe but if you're craving chicken wings but don't want to eat all the fat or calories that they are laiden with than try this. I cut up chicken thighs into 3 or 4 small pieces and place on a baking sheet. It is a great substitute. I small wing has 80 calories and 5.7 grams of fat. A medium skinless chicken thigh is 107 calories with 5.7 grams of fat. Basically you get a lot more for around the same amount of calories.

I made this as part as the Diet Solution Plan or DSP that I'm following. I love this diet but sometimes it's hard to find a recipe that follows the plan. This is just delicious.

This recipe is gluten-free, sugar-free and organic.

Italian Sausage

I'm following the DSP diet plan which does not allow gluten or sugar. I made these because I wanted a sausage that didn't contain either of the two. They're very hard to find in the stores. This is quick and easy and tastes a thousand times better than the store bought version.

This is just delicious!!! The calories might be a little high but the serving size is huge.

Pumpkin Bran Bud Muffins

I adapted an old banana loaf recipe that my Mom used to make. I added pumpkin instead of banana, took out a lot of the sugar, substituted half of the flour for bran buds and made an absolutely awesome muffin. Enjoy!

I have replaced black beans for the chicken and it is also delicious. I've also used black beans and chicken. Yum.

Yogurt Tartar Sauce

Drained yogurt can get as thick as cream cheese. And if you use non-fat yogurt, this cream cheese equivalent has no fat. It takes at least 24 hours for yogurt to drain enough to use in baking, but the cheese is thicker and creamier if drained longer. The volume of cheese you get varies, as some brands of yogurt drain more than others. YOGURT MUST BE GELATIN FREE.

Jerk Chicken (Overnight Marinade)

Scotch bonnet and habanero chiles are native to the Caribbean and are extremely hot. Scotch bonnets are traditional, but you can use habaneros, which are similar and easier to find. Use fewer or more, according to your taste. Protect your hands by wearing gloves when cutting the peppers and when rubbing the chicken with marinade. Plan ahead so the chicken can marinate overnight; allowing it to come to room temperature before grilling makes for faster and more even cooking.

This makes a very large pot of delicious soup. Can be served with bread or crackers.

Chicken, Mushrooms, Spinach & Green Onion Stirfry

This is a super quick and easy recipe. Especially if you buy precut mushrooms.
