Cucumber Summer Salad

My mother used to make a salad like this every summer - I LOVED it. I put my own twist on it with rice vinegar instead of red wine and also some spice.

Sunday Morning Omelet

One of my favorite omelets. The goat cheese adds a very decadent, rich, mouthfeel. The basil adds a very bright taste. I sometimes make this for a quick dinner. Generous serving size.

Yummy Stir Fry Chow Mein

This is great when you are craving Chinese food. The calories are not as high as stated as the oil for "frying" isn't all used. You can use stir fry chicken or shrimp equally well and use only 1 Tbsp. of oil for far fewer calories. Enjoy!
