The Oberlin Market: Vegan Garam Masala Muffins with Apple, Currants and Coconut

From The Oberlin Market.

Used standard recipe. Added 1/4 cup chopped apple, 1/4 cup currants, 1/2 cup dessicated coconut, 4 teaspoons garam masala.

Vegan With a Vengeance: Low-Fat Vegan Carrot Cake Brownies

Modified from 'Vegan With A Vengeance' Coconut-Ginger-Macadamia-Carrot Cake.

Substituted 1/2 cup unsweetened applesauce for oil. Eliminated sugar, coconut, ginger and macadamia nuts. Used 6 ounces pineapple juice, and 2 3/4 cups flour.

Used standard recipe. Added 2 tablespoons cardamom, 1/4 cup chopped walnuts, 2 tablespoons Earth Balance, 1/4 cup unpacked brown sugar.

Used standard recipe. Added 1/2 cup lemon juice, 2 teaspoons lemon extract, 1/2 cup ginger root, 12 pieces crystalized ginger.

Inauguration Dinner Cinnamon Apple Sponge Cake

This is unfortunately high in calories. Personally, I just eat the apple filling, and leave the rest alone! The apple filling itself is only about 177 calories, while the entire dessert is over 800 calories! O.o

Inauguration Dinner Seafood Stew

This is the first course of Obama's Inaugural Dinner. The original recipe called for heavy cream and lobster/monkfish, but fat free condensed milk and nonfat creamer have been substituted for the heavy cream, and the lobster/monkfish has been omitted.

As a tip: if you pass on the puff pastry shell, you save 223 calories! ;)

Parsley Salad With Feta and Almonds

A recipe from the Chicago Sun-Times. The original recipe has pomegranate seeds in it and is also covered in a pomegranate vinaigrette, but I have omitted both, because I couldn't find any pomegranate seeds, and I don't like salad dressing.

If you do like dressing, though, feel free to make the vinaigrette as directed on the website! =)
