This is a version of traditional Spanakopita designed for low carb diets, not low fat. This has been designed for taste akin to traditional Greek food, but without the additional carbs usually found in similar recipes that make it a no go for those of us unable to enjoy the original version for that reason.
Recipe is calculated without spices or salt, add to taste :)
This recipe is one of some I am trying to make with familiar foods but less/no dairy.
Baked kale is really ugly, but amazingly both good for you and tasty! It shrinks in a big way (like spinach), but tastes good. Try it once before blowing it off :)
