This is a great meatball recipe, you can always make them smaller or larger to suit your taste. As to seasonings, my suggestion is to play with that. I like Italian seasoning and red pepper flakes add zing.

Found this recipe and love veggie dishes. I think you could add a light sausage for a meal also.

Zucchini Muffins

Found this recipe by CASEYNJASON for a Chocolate Zucchini muffin, I am not a big chocolate fan so made a couple changes for my taste. I will include the info for the chocolate variety also.

Zucchini Cornbread

The recipe came from my Grandmother, who got it from a neighbor. I have made a couple adjustments and you can make more like using egg beater or skim milk. Even with these adjustment its not low calorie about 150 per piece so you can cut it smaller if you wish. But this is a delicious side with chili or bean soup.

Using low sodium tomatoes or fresh will lover the sodium level. I also would not pre salt my noodles.

I have substituted applesauce for oil.

Banana Nut Bread - NO Fat Added

I use applesauce for the fat in this recipe. Also splenda.

Friend made these delicious turkey Zucchini burgers, she used cumin and chili powder 1/2 tsp each. I liked mine with more the Italian flavor, both are great

Western Chili, Veggie

This is the best chili, I know veggie, but honestly it is. Spicy. Versilte use 1/2c and make some tasty nachos, or as a side with eggs. This makes 18 1 cup servings so I freeze most of the recipein single servings for a quick fix later.

Debbie's Stir Fry w/ Chicken

Lots of yummy veggies. Prep takes little more time, but can be done in advance, just store in containers by cooking start times. Can change out to your favorite veggies.

Deb's Navy Bean and Ham Soup - 1 cup

A crockpot meal. This is made with homemade stock with no salt added. I add a little salt in the cooking, but that is optional. If I need a taste of salt I sprinkle a little on my bowl but do not stir.

Red Velvert Cupcakes with Cream Cheese Frosting- Light

I was looking for a red velvet cupcake recipe to have for Christmas dessert last year, and this one turned out delicious. The original recipe was not low fat, but I made a few changes, they are less calories. This year I tried to reduce the fat more by using applesauce but they didnt work. So I went back to the original idea of decreasing the sugar and lower fat cream cheese. Everyone raved and didnt know till later that they were lowfat treat. I hope you like them too. I think it would be very easy to make half the recipe.

Found a good recipe in Better Homes and Garden Cookbook and made some modification.

Cornmeal Mountain Pancakes

This is an old family favorite, comes from my great grandmother, they were farm folk. I have only altered the fat a little, you can use corn oil or margarine. I am sure that you can use whole wheat or craked wheat flour, I haven ot tried those yet but probably will. Also Smuckers makes a Sugar-free Breakfast Syrup, it is thick and taste very good, very frw calories.

Modified a recipe I found, removing all the fat. Its a nice little dish, can adjust the seasoning to taste

Italian Meatloaf

Very tasy meatloaf with an italian twist. By using Turkey sausage you both lower sodium and fat. I use a jelly roll pan instaed of loaf pan, to get more of the fat away from the meat
